Guajillo are premium quality, dried, ripe Mirasol chillies. It’s the second most popular chilli in Mexico for its tannic, spicy, low heat flavour. Guajillos register a relatively low heat at around 7500 on the Schoville Heat Scale. Equally as wonderful used in a hearty winter stew as they are in a vibrant barbecue sauce!
